Due to the roasting of the coffee beans, the sugar browning process is activated. As a result of this process, the beans exude carbon dioxide. Carbon dioxide buildup in a seal pack can cause it to rupture.

To counteract this problem, the beans are packaged immediately after roasting in moisture-free laminated bags that contain a valve. This valve allows carbon dioxide to bypass the packing without allowing oxygen to enter.

Other less efficient packaging methods

However, there are other methods for packaging coffee, but they are not as effective as one-way valve bagging. These include a gasket with holes that the collected carbon dioxide allows to escape through a hole. With this method, there are chances of oxygen getting into the bag.

Another method includes waiting for the beans to emit carbon dioxide before packing. This means that however the package was prevented from breaking due to the accumulation of carbon dioxide inside the bag, the beans could not be saved from aging due to their exposure to oxygen.
